In 9x13 pan layer chicken and broccoli. Sprinkle with pepper and salt, I just shake a light amount on top from the shaker without measuring.
In a large saucepan or skillet, melt butter and whisk in flour until smooth. Cook for 1 minute.
Slowly pour in the chicken broth while whisking. Add onion and garlic powder. Continue cooking until the sauce thickens.
Once sauce is thickened, stir in mayonnaise and curry powder. Pour over top of chicken and broccoli.
Sprinkle an even layer of grated cheese over top.
To make biscuit topping, combine the flour, baking powder, baking soda, and salt in a large bowl.
Using a pastry cutter or two knives, cut in the cubed butter until it reaches pea-sized crumbles.
Add the honey and buttermilk. Gently mix together to make a wet dough.
Take a large spoon and drop dough by the spoonful on top of the casserole dish, you can take the back of the spoon to smooth is out if needed to cover the top.
Bake the whole casserole in preheated oven for 30 to 35 minutes, until biscuit tops are golden.
Notes
Recipe Tips:
Do not overmix the biscuit dough, or it will become tough.
Make sure your sauce thickens before adding it to the casserole for the best texture.
Use freshly shredded cheese for better melting and flavor.
Let the casserole rest for 5 to 10 minutes before serving, so it sets up nicely.
Adjust the curry powder to your taste if you prefer a milder or stronger flavor.
