Homemade Pancake Mix

Whip up a batch (or more) of this homemade pancake mix, then mix up pancakes any weekday morning with very little hands-on effort.

Ingredients
  

Pancake Mix

  • cups flour
  • teaspoons baking powder
  • 1 Tablespoon sugar
  • 1 teaspoon salt

Cooking instructions

  • 1 jar pancake mix recipe above
  • cup milk or cream or non-dairy milk of choice
  • 1 whole egg
  • 3 Tablespoon butter melted (or substitute coconut oil)
  • 1 teaspoon vanilla extract optional

Instructions
 

For the Pancake Mix

  • Layer ingredients into a 16 ounce Mason jar.
  • Add a lid. Label and date.

To Make Pancakes

  • Add pancake mix, milk, egg, melted butter and vanilla into a bowl.
  • Mix until well combined.
  • Heat a lightly greased skillet over medium high heat.
  • Use approximately 1/4 cup batter for each pancake.
  • Cook until tiny bubbles form, flip and cook until browned on the other side.
  • Serve with butter, maple syrup and additional toppings of choice.

Notes

To make these more light and fluffy, use buttermilk!
